Chef Kristian Wade, Executive Chef at MGM Resorts International’s Beau Rivage in Biloxi, Mississippi, has taken on the challenge of developing the tastiest “blended burger” as part of the James Beard Foundation’s (JBF) Blended Burger Project™. The project is a nationwide contest to make a delicious, healthier, and more sustainable burger.
Wade has chosen to feature his Landmass Burger, named after the Weather Channel forecaster’s description of the Mississippi Gulf Coast – the landmass between New Orleans, Louisiana and Mobile, Alabama. The burger features two grilled patties made with a combination of ground beef and finely chopped mushrooms. Adding mushrooms to the patty not only reduces calories, fat, and sodium, but also adds important nutrients to the burger. Guests can enjoy a healthier, sustainably-made burger without sacrificing flavor.
The burger sits atop a homemade bun and is topped with American cheese, Mississippi tomato fondue, caramelized onions and crispy bread and butter pickles. To complete the burger, a delicious blend of New Orleans barbecue sauce and Alabama white sauce serve as the condiment.
Wondering why Chef Kristian has taken on this challenge?
He said, “I attended the Re-Think Food Conference at the Culinary Institute of America in Greystone, California and had a defining moment as a chef. The thought of not being able to feed the world’s population 50 years from now was eye-opening and scary for me. It made me realize that it is my responsibility to take this crisis on, starting with myself and the chefs who work with me. When I read the e-mail for the Blended Burger Project this summer, I said to myself: ‘this is a perfect opportunity to bring awareness of sustainable food sources to our staff and guests’.”
